Carrot cake - low carb

Ingredients

  • 2 whole carrots
  • 4 whole eggs
  • 1 cup coconut oil
  • 1 cup Light brown sugar
  • 1 1/2 cup rice flour
  • 1/2 cup potato starch
  • 1/2 cup tapioca flour
  • 1 tablespoon baking powder
  • 1/2 cup flaxseed flour
  • coconut oil to grease the trail
  • 1 cup Dark chocolate melted
  • 1/2 cup green banana biomass check separate recipe
  • 1 tablespoon honey

Instructions

  1. CAKE
  2. In a blender mix the carrots, eggs, oil and the light brown sugar.
  3. In a separate bowl blend the previous mixture to the rice flour, potato starch and tapioca flour. Then add the flaxseed flour and the baking powder. Mix very well.
  4. Bake it in a preheated oven (350º) for about 35-40 min.
  5. FROSTING
  6. Mix the chocolate with the biomass.
  7. It last for days.
