Keto - ish Ham and Cauliflower Soup slow cooker
Ingredients
- 8 cups Cauliflower 2 bags frozen works
- 1 teaspoon dried onion
- 1 carrot peeled and chopped (using several baby carrots works well)
- 1/2 cup celery chopped
- 16 ounce ham cubed (can cub yourself or buy packages already done)
- 1 teaspoon salt (or omit since ham has sodium)
- 1/4 teaspoon pepper
- 4 cups Low sodium chicken broth (or water + bouillon)
- 1 1/2 cups heavy cream
- 1/4 cup flour (could sub almond flour? havent tried yet)
- 1/2 cup sour cream
Instructions
- Add everything but last 3 ingredients to slow cooker. Cook on low 7-8 hours (the cauliflower will start to break down, so 6-7 keeps them firmer)
- add flour, cream, sour cream to slow cooker and stir.
- cover and cook for an additional 15 mins to thicken and heat
