Spicy Beef And Cheesy Cornbread All In One Recipe

Ingredients

  • 1/2 to 1 lb. leftover cooked meat (or just cook some)
  • 1 can El Pato hot mexican tomato sauce
  • 1 can fire roasted chopped green chiles
  • 1/2 cup chopped onion (my leftover meat already had onion in it)
  • Chipotle chile powder - just shook it in to taste
  • 1 package Jiffy Corn Bread mix
  • 1 1/2 cups (or more) shredded cheddar (or use whatever cheese you like)
  • 1/2 cup sour cream
  • 1/2 cup cottage cheese (I tried it and liked it)

Instructions

  1. Saute onions if using
  2. Dump meat in pan and reheat with El Pato, chiles, and chile powder
  3. Bring to simmer
  4. Meanwhile mix the Jiffy mix with the sour cream, cottage cheese, and about 1/2 cup of the cheddar
  5. Put half of the cornbread mixture in bottom of greased 8x8 casserole
  6. Top with the meat mixture
  7. Put the rest of the cheese over that, and top with remaining corn bread mix.
  8. Bake in 350* oven for approximately 35 minutes
  9. Let sit a bit and cut into squares to serve or just blop it on your plate
  10. Top with sour cream and cilantro (optional) and more salsa too…..
