Spicy Beef And Cheesy Cornbread All In One Recipe
Ingredients
- 1/2 to 1 lb. leftover cooked meat (or just cook some)
- 1 can El Pato hot mexican tomato sauce
- 1 can fire roasted chopped green chiles
- 1/2 cup chopped onion (my leftover meat already had onion in it)
- Chipotle chile powder - just shook it in to taste
- 1 package Jiffy Corn Bread mix
- 1 1/2 cups (or more) shredded cheddar (or use whatever cheese you like)
- 1/2 cup sour cream
- 1/2 cup cottage cheese (I tried it and liked it)
Instructions
- Saute onions if using
- Dump meat in pan and reheat with El Pato, chiles, and chile powder
- Bring to simmer
- Meanwhile mix the Jiffy mix with the sour cream, cottage cheese, and about 1/2 cup of the cheddar
- Put half of the cornbread mixture in bottom of greased 8x8 casserole
- Top with the meat mixture
- Put the rest of the cheese over that, and top with remaining corn bread mix.
- Bake in 350* oven for approximately 35 minutes
- Let sit a bit and cut into squares to serve or just blop it on your plate
- Top with sour cream and cilantro (optional) and more salsa too…..
