Low Carb Chili

Ingredients

  • 1 cup onion diced
  • 2 red bell peppers diced
  • 3 tablespoons olive oil
  • 2 pounds ground beef
  • 1 teaspoon cumin
  • 1 tablespoon Lime Juice
  • 10 ounces Tomato juice
  • 2 cloves garlic minced
  • 2 tablespoons Chili powder
  • 1/4 teaspoon stevioside (4 packets Stevia)
  • 2 teaspoons cocoa powder
  • 1 teaspoon red pepper flakes optional
  • 1 teaspoon paprika optional
  • 8 ounces Cheddar cheese shredded
  • Sour cream
  • Jalapenos optional for topping

Instructions

  1. Saute onion and bell peppers in a skillet with about 3 tablespoons of oil until onions are clear. Add beef and remaining ingredients except cheese, sour cream, & jalapenos. Saute until beef is done. Serve hot.
